A delightful summer snack featuring grilled corn topped with creamy dressing, cheese, and spices.

Ingredients

Scale
  • 6 cups fresh corn (from 6-7 cobs)
  • 2 tablespoons melted butter
  • 1/3 cup mayonnaise
  • 1/2 cup grated or crumbled queso fresco
  • Juice from one lime
  • 1 cup diced green onions
  • 1/2 cup chopped fresh cilantro
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon chili powder (or to taste)
  • Additional queso fresco, cilantro, and chili powder for garnish

Instructions

  1. Prepare the corn by cutting the kernels off the cobs and placing them in a mixing bowl. Drizzle with melted butter and toss to coat.
  2. Broil the corn by spreading it in a single layer on a sheet pan. Preheat your broiler and broil the corn for about 5 minutes until a few kernels char.
  3. Combine the corn with mayonnaise, queso fresco, lime juice, green onions, cilantro, salt, garlic powder, and chili powder. Mix well and adjust spices to taste.
  4. Serve the corn mixture in a bowl, topped with additional cheese, cilantro, and chili powder. Enjoy warm!

Notes

For extra flavor, consider adding BBQ sauce or diced avocado. Avoid freezing the dish to maintain texture.
