Ingredients
Scale
1 lb lean ground beef or turkey (90% lean)
Salt and pepper, to taste
½ tsp garlic powder
½ tsp onion powder
4 cups chopped lettuce (or 2 cups cooked quinoa, brown rice, or cauliflower rice)
1 cup cherry tomatoes, halved
½ cup sliced dill pickles
½ red onion, thinly sliced
1 cup shredded cheddar or American cheese
1 avocado, sliced
4 strips cooked bacon (optional)
Jalapeño slices (optional)
4 fried eggs (optional)
½ cup low-fat Greek yogurt
1 tbsp mustard
1 tbsp ketchup
½ tsp garlic powder
½ tsp paprika
Instructions
Cook the meat: In a skillet over medium heat, brown the ground meat. Season with salt, pepper, garlic powder, and onion powder. Cook for 8 to 10 minutes, stirring until thoroughly cooked. Drain any excess fat.
Prepare the base: While the meat is cooking, chop the lettuce or prepare your chosen grain (quinoa, brown rice, or cauliflower rice).
Prep the toppings: Slice the cherry tomatoes, pickles, and red onion, along with any optional add-ons you like.
Make the sauce: In a bowl, whisk together the Greek yogurt, mustard, ketchup, garlic powder, paprika, salt, and pepper until smooth and creamy.
Assemble the bowls: Start layering your bowls! Begin with your base (lettuce or grain), then add the cooked meat, your choice of toppings, and finally, a sprinkle of cheese. Drizzle with the homemade sauce.
Optional finish: For extra protein and flavor, you can top your bowls with a fried egg, crispy bacon, or sliced avocado.
