Ingredients

Scale
  • 2 cups plus 2 tablespoons lukewarm water (around 110°F or 43°C)
  • 1 tablespoon molasses
  • 2 teaspoons active dry yeast
  • 7 cups bread flour
  • 2 teaspoons Morton kosher salt
  • 1 tablespoon molasses (for boiling)
  • 1/2 cup firmly packed dark brown sugar
  • 3 tablespoons granulated sugar
  • 3 teaspoons ground cinnamon
  • 3 tablespoons melted butter
  • 1 beaten egg (for brushing)
  • Cornmeal (for dusting the baking sheet)

Instructions

  1. In a large mixing bowl, combine lukewarm water and molasses. Sprinkle yeast over the top and let sit for 5-10 minutes until foamy.
  2. Add bread flour and salt to the yeast mixture; mix until dough forms, then knead for 5-7 minutes until smooth and elastic.
  3. Place dough in a greased bowl, cover, and let rise in a warm spot for about 1 hour until doubled in size.
  4. Punch down dough, divide into 12 pieces, and shape into bagels by poking a hole through each ball.
  5. Boil water with molasses, then gently boil bagels for 1-2 minutes on each side; drain on a towel.
  6. Mix dark brown sugar, granulated sugar, cinnamon, and melted butter in a bowl. Brush boiled bagels with beaten egg and sprinkle with cinnamon sugar.
  7. Preheat oven to 425°F (220°C) and bake bagels for 15-20 minutes or until golden brown.
  8. Let cool slightly before serving.
