A delightful Mexican street corn recipe, known as Elote, that combines sweet corn with creamy dressing, cotija cheese, and spices for a simple yet flavorful dish.

Ingredients

Scale
  • 4 cups corn kernels
  • ¼ cup mayonnaise
  • ¼ cup sour cream
  • ½ cup cotija cheese, crumbled
  • 1 lime, juiced
  • 1 tsp chili powder
  • ¼ tsp smoked paprika
  • ¼ tsp salt
  • 2 tbsp chopped cilantro

Instructions

  1. Prepare the Corn: Begin by ensuring your corn kernels are dry. You can use fresh corn on the cob, frozen, or even canned—just drain the liquid well if you’re using canned corn.
  2. Make the Dressing: In a bowl, mix together the mayonnaise, sour cream, lime juice, chili powder, smoked paprika, and salt until everything is well blended.
  3. Combine Corn and Dressing: Add the corn kernels into the bowl with the dressing and gently toss to combine, making sure every kernel is coated with that creamy goodness.
  4. Add Cheese and Cilantro: Gently fold in the crumbled cotija cheese and the chopped cilantro, giving your mix a light toss.
  5. Garnish and Serve: Sprinkle a little extra chili powder on top for an added kick, and garnish with lime wedges. You can serve it immediately or let it chill for about 10 minutes for the flavors to meld.

Notes

This dish can be served warm or cold and is perfect for taco night or as a side for barbecues.
