Ingredients
Scale
4 cups mixed greens (spinach, arugula, and romaine)
1 cup cherry tomatoes, halved
1 cucumber, diced
1 bell pepper, diced
1/2 red onion, thinly sliced
1/2 cup feta cheese, crumbled (optional)
1/4 cup olives (kalamata or green)
1 avocado, sliced
1/4 cup olive oil
2 tablespoons balsamic vinegar
1 teaspoon Dijon mustard
1 teaspoon honey or maple syrup
Salt and pepper to taste
Instructions
Prepare the Salad Base: Start by washing and drying your mixed greens thoroughly. Place them in a large salad bowl.
Chop the Veggies: Halve the cherry tomatoes, dice the cucumber, and bell pepper, and slice the red onion. Add these colorful veggies to the bowl.
Add Feta and Olives: If you’re using feta, sprinkle it over the salad along with the olives.
Slice the Avocado: Right before serving, slice the avocado and gently place it on top of the salad.
Make the Dressing: In a separate bowl, whisk together olive oil, balsamic vinegar, Dijon mustard, honey, salt, and pepper until well combined.
Toss and Serve: Drizzle the dressing over the salad just before serving. Toss gently to combine all the ingredients and coat them evenly with the dressing.
Notes
For meal prep, keep the dressing separate until ready to eat.
