A quick and delightful Chicken Lo Mein recipe with tender chicken, vibrant vegetables, and slurpy noodles coated in savory sauce.

Ingredients

Scale
  • 3-4 boneless, skinless chicken breasts
  • Lo Mein noodles (fresh or dried)
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 2 carrots (thinly sliced)
  • 2 green onions (chopped)
  • ¼ cup low-sodium soy sauce
  • 1 tablespoon sesame oil
  • 3 cloves fresh minced garlic

Instructions

  1. Prepare Your Ingredients: Start by gathering all your ingredients. Chop the bell peppers and carrots into bite-sized pieces. Don’t forget to chop those green onions!
  2. Cook the Noodles: Bring a pot of water to a boil and cook the Lo Mein noodles according to package instructions until they are al dente. Once cooked, drain and set aside.
  3. Sauté the Chicken: Heat a large skillet or wok over medium-high heat, then add a splash of oil. Sauté the chopped chicken until it turns golden brown and is cooked through, about 6-8 minutes. Once done, remove the chicken from the skillet.
  4. Stir-Fry the Vegetables: In the same skillet, toss in the bell peppers, carrots, and green onions. Stir-fry for about 3-4 minutes until they are tender yet crisp.
  5. Combine Everything: Return the cooked chicken to the skillet with the vegetables. Add the Lo Mein noodles, soy sauce, sesame oil, minced garlic, and any additional spices you fancy. Toss everything together until well mixed.
  6. Serve and Enjoy: Once everything is heated through, serve your Chicken Lo Mein hot with some extra soy sauce if desired.
