Ingredients

Scale
  • 2 cups (260g) all-purpose flour
  • 1 1/2 cups (300g) granulated sugar
  • 1 cup (90g) unsweetened cocoa powder
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 cup (240mL) milk
  • 1/2 cup (120mL) vegetable oil
  • 2 teaspoons pure vanilla extract
  • 1 cup (240mL) hot black coffee
  • 4 cups (480g) powdered sugar
  • 1 1/2 cups (340g) unsalted butter, softened
  • 1/4 teaspoon salt
  • 2 teaspoons pure vanilla extract
  • 3-5 tablespoons milk

Instructions

  1. Preheat your oven to 350°F (175°C). Butter two 9-inch round cake pans, then line them with parchment paper and lightly dust with flour or cocoa powder.
  2. In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add the eggs, milk, oil, and vanilla extract to the dry ingredients. Whisk until just combined.
  4. Carefully pour the hot coffee over the batter and mix quickly until well blended.
  5. Divide the batter evenly between the prepared pans and bake for 20-25 minutes or until a skewer inserted into the center comes out clean.
  6. Cool the cakes in the pans for about 10 minutes before transferring them to a wire rack to cool completely.
  7. For the frosting, sift the cocoa and powdered sugar into a bowl. Add the softened butter and mix until combined.
  8. Add salt, vanilla, and 3 tablespoons of milk; whip until fluffy. Adjust thickness with more milk if necessary.
  9. Once the cakes are cool, frost one layer, place the second layer on top, and frost the entire cake.
  10. Slice, serve, and enjoy!
